Amanda Davison’s Holiday Carrot Soufflé INGREDIENTS Mixture Ingredients: 5 lbs carrots, cooked and drained 6 eggs 1 cup granulated sugar 6 tablespoons flour 2 teaspoons baking powder 2 teaspoons vanilla 2 cubes melted butter 1/8 teaspoon nutmeg 1/8 teaspoon cinnamon Topping Ingredients: 1/2 cup crushed corn flakes 4 tablespoons brown sugar 4 tablespoons melted butter 1 cup chopped pecans DIRECTIONS Preheat oven to 350 degrees. Blend cooked drained carrots in blender with eggs, sugar, flour, baking powder, vanilla, butter, nutmeg and cinnamon (may be too large for blender so do half of the recipe at a time. Pour into a greased 2 1/2 quart baking dish. Mix all topping ingredients together and sprinkle evenly on top of carrot soufflé. Bake uncovered for approximately 45 minutes.
